Juicy chicken marinated overnight in soy, seasoned rice wine vinegar, honey, garlic, citrus soda, and Spice is Life Original Choil, then grilled over open flame and finished with a glossy Choil BBQ glaze. Sweet, smoky, sticky.

Ingredients

    • 1 1/2 lbs boneless skinless chicken thighs, cut into 1-inch cubes
    • 1 1/2 lbs boneless skinless chicken breasts, cut into 1-inch cubes

    • 1/2 cup ketchup
    • 12 oz 7-Up or Sprite
    • 3/4 cup light soy sauce
    • 1/4 cup dark soy sauce
    • 1/2 cup seasoned rice wine vinegar
    • 1/4 cup oyster sauce
    • 2 tbsp Spice is Life Original Choil
    • 1 cup brown sugar
    • 1/4 cup local honey
    • 2 tsp ground black pepper
    • 1 cup minced garlic

    • 1 cup reserved marinade
    • 1/4 cup ketchup
    • 2 tbsp oyster sauce
    • 1 1/2 tbsp sesame oil
    • 1/4 cup local honey

    Directions

      1. Cut the chicken into 1-inch cubes.
      2. In a large bowl, whisk together the ketchup, 7-Up, light and dark soy sauces, seasoned rice wine vinegar, oyster sauce, Original Choil, brown sugar, honey, black pepper, and garlic.
      3. Reserve 1 cup of the marinade before the chicken goes in. This becomes your finishing glaze.
      4. Pour the remaining marinade over the chicken and toss until evenly coated.
      5. Cover and refrigerate at least 6 hours. Overnight, 12 to 24 hours, gives the best flavor. Do not exceed 24 hours.
      6. Remove the chicken from the refrigerator 20 to 30 minutes before grilling.

      1. Combine the reserved marinade with the ketchup, oyster sauce, sesame oil, and honey in a small saucepan. Simmer gently 3 to 5 minutes, stirring occasionally, until slightly thickened.

      1. Thread 5 to 6 pieces of chicken onto each skewer, alternating breast and thigh for the juiciest bite.
      2. Preheat the grill to 375 to 400F. Grill the skewers 2 to 3 minutes per side, rotating, until the chicken reaches about 150F internal.

      1. Brush generously with the glaze, turn and grill 1 minute, then brush the opposite side. Repeat until sticky and caramelized.
      2. Continue cooking until the chicken reaches 165F internal.
      3. Rest 5 minutes before serving.
